Introduction

Once again, happy Easter long weekend!

Well it’s Easter Sunday, and the holiday long weekend is about to come to a close. So you know what that means! That’s right, it’s time for the conclusion to my 2-Day Miniseries Celebrating All Things “Bunneh!”

If you’ll recall, yesterday (for Part 1) I had featured a selection of my favorite lolbunny pictures from the I Can Has Cheezburger website.

Well, today’s post is all about Oolong, that “Pancake Bunny” from Hokkaido, Japan that became an instant Internet sensation back in 2001-2002 for possessing the ability to balance any object or food item on his head.

Unfortunately, poor Oolong died on January 7, 2003… but his legacy lives on thanks to the hundreds of photographs taken by owner Hironori Akutagawa while he was still alive (all with the rabbit balancing random stuff on his head, of course).

And like I said, although Oolong was made famous for being the “Pancake Bunny,” he can definitely balance more than just a pancake on his head! Although most of the objects are food-related, there are some strange ones thrown in there that have nothing to do with pancakes, waffles, or pastries.

Recreating Subway’s Golden Broccoli Cheese Soup: Part 3 & conclusion of my search for the ideal broccoli cheese soup recipe!

It’s been a while since I had blogged about my search for the perfect broccoli cheese soup recipe.

If you’ll recall, Part 1 revolved around Martha Stewart’s Broccoli Soup with Cheddar Toasts recipe, while Part 2 showcased a copycat recipe that attempts to recreate Quiznos’ Broccoli Cheese Soup. For those keeping track, so far the Quiznos copycat recipe is winning the race!

Ready for the conclusion of my 3-Part Miniseries covering my search for the perfect broccoli cheese soup? Welcome to Part 3: Recreating Subway’s Golden Broccoli Cheese Soup… with a copycat recipe that apparently comes straight from the horse’s mouth (a.k.a. directly from the Subway restaurant chain itself)!

On a forum posting made on the “community” message board of the Taste of Home website, someone was nice enough to post a copycat recipe for Subway’s Golden Broccoli Cheese Soup that apparently comes “straight from Subway Sandwiches.”

Since recreating Quiznos’ Broccoli Cheese Soup turned out so well in the previous post of my 3-Part Miniseries, I made the decision to give this copycat recipe of Subway’s own Broccoli Cheese Soup a whirl. It didn’t hurt that I had recently been daydreaming about having Subway’s broccoli soup again… Mmmm, yum!

Major differences between Quiznos’ version vs. Subway’s?

The Quiznos soup recipe calls for shredded carrots, and the end product is an extremely cheesy soup with a thick consistency. I was very satisfied with the results from that copycat recipe… it tasted pretty dang similar to the real thing from the restaurant!

On the flip side, the Subway soup recipe didn’t call for carrots, but it did require double the milk (i.e. 2 cups in the Subway recipe, vs. 1 cup of half-and-half as requested in the Quiznos recipe… although should be noted that I ended up substituting milk for the half-and-half in the Quiznos version just to make the soup a bit healthier). The end result was still a pretty cheesy soup, but with a creaminess to it that made it uniquely different from the Quiznos Broccoli Cheese Soup.

Overall, I would say that both of these restaurant copycat soup recipes turned out extremely well. I can definitely see myself recreating either of those soups again and again. Guess that speaks for itself!

So it seems like I can stop my search for the perfect broccoli cheese soup recipe… as I have found it in both Quiznos’ Broccoli Cheese Soup copycat recipe and Subway’s Golden Broccoli Cheese Soup copycat recipe!

Without further ado, here is the copycat recipe for Subway Restaurant’s Golden Broccoli Cheese Soup. Should be noted that I made some major changes. I didn’t want to use bouillon cubes (too salty)… so I opted to replace the requested hot water & bouillon cubes ingredients with equal amounts of no salt-added chicken stock.

Plus, instead of using frozen broccoli, I opted to use one elastic-bound bunch of fresh broccoli. Also, at the end of the directions from the original recipe, there was no mention of blending the soup in a blender in order to puree the broccoli pieces together into a paste. I decided to follow through with blending the soup anyway, much like how I had done with the last two broccoli soups that I had created for Part 1 & 2 of this 3-Part Miniseries. And that’s it!

Subway’s “Golden Broccoli Cheese Soup” Copycat Recipe

Ingredients:

  • 2 tsp onion
  • 2 tsp melted butter
  • 3 tsp flour
  • 1/4 tsp pepper
  • 2 cups  milk
  • 1 cup grated Cheddar cheese
  • 5 chicken bouillon cubes
  • 1 1/2 cups boiling water
  • 1 10-oz package of frozen broccoli (or fresh broccoli)

Directions:

  • Cook onion in butter until tender
  • Blend in flour & pepper
  • Add milk
  • Cook over medium heat until thickened
  • Add cheese
  • In another pan, dissolve bouillon cubes in hot water
  • Add broccoli & cook until tender
  • Add to cheese mixture & blend

Serves: 4

Happy Easter long weekend, everyone!

I know this holiday means different things to different people, and I’m not here to get into the religious part of it. But as a lover of bunnies (and proud owner of the cutest bunny in the whole wide world, no exaggeration!), I knew I had to blog about the bunny aspect of Easter.

No other holiday celebrates the love of bunnies as much as Easter, that’s for sure! Everyone knows all about the Easter bunny, and who hasn’t eaten a chocolate bunny or two in their childhood?

Whether you’re a fellow lover of lagomorphs, proud owner of your own pet rabbit, or enjoy giggling over lolbunny pictures online… if you answered yes to any of those three statements, then you’ll likely appreciate my 2-Day Miniseries on All Things “Bunneh!”

First up? Get ready for a blog post devoted to nonstop cute lolbunny pictures from the I Can Has Cheezburger website!

For those of you unfamiliar with I Can Has Cheezburger, it’s basically a site devoted to listing adorable pictures of kitties (a.k.a. “kittehs“), dogs (a.k.a. “dawgs“), bunnies (a.k.a. “bunnehs“) and other animals… and they add hilarious captions to each picture that are intentionally misspelled and grammatically incorrect, turning them into “lolcats” or “loldogs,” etc.

The end result? Pure genius. I mean, you can’t go wrong with a formula based around cute animals and funny one-liners!

Like I had said, I Can Has Cheezburger is built around a language made up of intentionally misspelled & grammatically incorrect words and phrases. These gibberish words make up “lolspeak” (a.k.a. “lolcat“) defined as:

Want to know how to speak lolcat? According to this wikiHow page, it’s quite easy!

Basic steps to speaking Lolcat:

  • Rearrange order of words (including using incorrect plurals & past tense)
  • Make nouns adjectives (including using improper nouns)
  • Drop articles (“a” or “the”) & add “-age” to end of nouns
  • Use “young” words
  • Use “with” inappropriately
  • Go to a translation website and translate English to Japanese, then copy the text & translate back from Japanese to English
  • Mispel stuf
  • Use Internet abbreviations & misspell them
  • EXCLAIM!!!
  • Use “teh” & not “the”
  • Use “z” & not “s”
  • Pluralize verbs

My very first viewing of a “lolbunny” pic is the classic “I Has a Bunny!” picture from 2007. Yummy, yummy Sunny Anderson’s Nutty White Chocolate and Peach Oatmeal Cookies in my tummy!

As you may be already aware, I had recently picked up the latest May 2011 edition of the Food Network Magazine.

I’ve already tested out the magazine’s copycat recipe of IHOP’s New York Cheesecake Pancakes… which turned out quite successfully, I might add. So I figured I’d give another equally sweet dessert recipe a try.

Note: Of course, this implies that I consider IHOP’s cheesecake pancakes a “dessert” and not a breakfast item… which seems logical to me, considering how sinfully rich and decadent those pancakes are! But I digress.

Introducing the recipe for Nutty White Chocolate and Peach Oatmeal Cookies by Food Network chef and host of TV show Cooking for Real, Sunny Anderson!

Sunny’s white chocolate chip cookie recipe was featured in the Food Network Magazine alongside another chocolate chip cookie recipe: Kids’ Candy Cookies by Food Network chef and host of TV show Kid in a Candy Store, Adam Gertier. It’s basically a battle royale between the two cookie recipes, where readers can vote online to help crown “The Ultimate Chocolate Chip Cookie” champion!

Now, I gotta say I’m a bit biased here since I’ve only tried making Sunny’s Nutty White Chocolate and Peach Oatmeal Cookies… I have yet to attempt making Adam’s Kid’s Candy Cookies.

However, I’ve always been a bigger fan of white chocolate chip macadamia nut cookies vs. candy-coated chocolate chip cookies such as Chips Ahoy… so I knew pretty instinctively that Sunny’s cookies would be my preference! And after actually trying out her cookie recipe, my initial gut feelings were definitely confirmed because the cookies turned out amazingly (see recipe below!).

Anyway, you can go and vote for your favorite on the Food Network Magazine website. I went ahead and voted for Sunny, and this is what the voting results look like so far (as of today, April 21st)…

Sunny Anderson Nutty White Chocolate and Peach Oatmeal Cookies recipe

Introducing Sunny Anderson's Nutty White Chocolate and Peach Oatmeal Cookies!

Here is the recipe for Sunny’s Nutty White Chocolate and Peach Oatmeal Cookies. I should mention though that I did make a few adjustments.

First off, my neighborhood grocery store only carried dried peaches in the gourmet dried fruits and nuts aisle… where a tiny container of dried peaches was priced at $9! I decided to replace that ingredient with dried apricots instead, comparatively priced at $3 for the same weight. I mean, I love cooking gourmet but the frugal side of me still takes over once in a while!

Also, I opted to double the recipe right away. If you were to follow Sunny’s recipe as-is, you would be able to make approximately 20 cookies. I figured if I was already going through the process of baking the cookies, I might as well double the number of cookies made… especially since cookies keep well. I ended up with 45 cookies, and it turns out the cookies tasted even better the day after! So I definitely recommend doubling the recipe.

Sunny Anderson’s “Nutty White Chocolate and Peach Oatmeal Cookie” Recipe

Ingredients:

  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1 stick unsalted butter, softened
  • 1/4 cup packed light brown sugar
  • 1/4 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups rolled oats
  • 1/2 cup chopped dried peaches
  • 1/2 cup chopped walnuts
  • 1/2 cup white chocolate chips

Directions:

  • Position racks in upper & lower thirds of oven
  • Preheat oven to 350° F
  • Whisk flour, baking soda & salt in small bowl
  • In a stand mixer fitted with the paddle attachment, cream butter, light brown sugar, dark brown sugar and granulated sugar until light & fluffy
  • Add egg & mix on low speed until incorporated
  • Slowly add flour mixture, oats, dried peaches, walnuts & white chocolate chips
  • Mix until combined
  • Line 2 baking sheets with parchment paper
  • With wet hands, make 20 balls from dough & place each on prepared baking sheets, 2″ apart
  • Press down on dough balls with palm of hand to flatten
  • Bake cookies until golden & tender in center (15-17 min)
  • Remove from oven & let sit on baking sheets for 1 min
  • Transfer cookies to rack to cool completely

Active time: 25 minutes
Total time: 40 minutes
Makes: About 20 cookies

Recreating IHOP’s New York Cheesecake Pancakes with copycat recipe from Food Network Magazine (May 2011)

So I know this is going to sound completely contradictory (seeing how I had just written a blog post last week ranting about America’s obsession with bacon)… but this past weekend, I made the decision to cook a Sunday morning brunch based around my attempt at recreating IHOP’s New York Cheesecake Pancakes.

What exactly are IHOP’s New York Cheesecake Pancakes, you ask? Is it a breakfast item? Is it a dessert? Well, let’s refer to the official IHOP website to find out!

Yup, that’s right. I’m talking about IHOP’s “Frankensteined” concoction of cheesecake and pancakes combined into one… now commonly referred to as “Pancake Stackers” at your neighborhood IHOP restaurant.

So yes, I have to admit the idea of eating IHOP’s New York Cheesecake Pancakes on a regular basis would be a recipe for guaranteed obesity. But since I’m a Canadian, I don’t have the luxury of being able to saunter into a nearby IHOP restaurant and ordering their Pancake Stackers anytime I want. The nearest IHOP to where I live would be in the Niagara Falls/Buffalo region… which is a good 1 1/2 to 2 hours drive away by car, and across the U.S./Canada border!

Once in a while, my husband and I do find ourselves going on road trips to the States… and usually if we happened to swing by Buffalo, we’d stop at an IHOP for brunch.

During one of our recent visits, I did find myself trying their New York Cheesecake Pancakes. And yes, I do admit they were sinfully delicious. But I most definitely would not have them more than once in a blue moon, that’s for sure! I mean, according to this article on the “Scariest New Restaurant Food,” IHOP’s New York Cheesecake Pancakes ranks #4 with a whopping total calorie intake of 1,270 per meal… that’s the calorie equivalent of 28 McDonald’s Chicken McNuggets!

Anyway, why am I all of a sudden blogging about IHOP’s Pancake Stackers? Well, I just purchased the latest May 2011 edition of the Food Network Magazine… and guess what was on the cover? If you guessed IHOP’s New York Cheesecake Pancakes, then you would be correct!

Seeing how I have a thing for trying out copycat restaurant recipes, I was highly curious as to whether or not I’d be able to accurately reproduce IHOP’s New York Cheesecake Pancakes… which is why I decided to give the Food Network Magazine‘s “Almost-Famous Cheesecake Pancakes” recipe a try (that’s the name they gave to their copycat recreation of IHOP’s “top secret” recipe).

I gotta admit, it was fun making these cheesecake pancakes. Ridiculously rich, of course… and I’m likely to never make them again. But I can now say I’ve successfully attempted recreating IHOP’s New York Cheesecake Pancakes… because they did indeed taste pretty darn similar to the original!

A couple notes, for those of you would are also interested in giving this recipe a whirl. The recipe calls for “2 cups of chopped frozen cheesecake.” I had purchased a 600g circular frozen cheesecake that’s approximately 5 1/2″ wide in diameter, and 1 1/2″ tall. I found that 2 cups of chopped cheesecake loosely translated to half of the frozen cake.

Also, the recipe calls for 2 tbsp of jam and 2 tbsp of warm water be mixed with 1 1/2 cups of sliced strawberries in order to make the strawberry sauce. I found that adding 2 tbsp of warm water was too much, and made the sauce very “liquidy” and diluted. I’d recommend maybe dividing the amount of water by half, and slowly adding more if needed.

Without further ado, here’s the copycat recipe below! Cheers.

IHOP’s “New York Cheesecake Pancake” Copycat Recipe

Ingredients:

  • 1 1/2 cups strawberries, hulled & sliced
  • 2 tbsp seedless strawberry jam
  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 2 cups chopped frozen cheesecake
  • Cooking spray
  • Butter/confectioners’ sugar/whipped cream for topping

Directions:

  • Mix strawberries, jam & 2 tbsp warm water in a bowl; set aside
  • Preheat oven to 200°F
  • In blender, pulse flour, buttermilk, egg & oil
  • Add granulated sugar, baking powder, soda & salt
  • Continue pulsing in blender until smooth
  • Transfer to a bowl & stir in cheesecake pieces, keeping them whole
  • Coat nonstick skillet or griddle w/ cooking spray & heat over medium heat
  • Working in batches, pour 1/4 cup batter into skillet for each pancake
  • Cook until bubbly on top (about 4 min)
  • Flip & cook until other side golden (about 2 more min)
  • Transfer finished pancakes to baking sheet & keep warm in preheated oven
  • Serve pancakes topped w/ strawberry sauce
  • Top w/ butter, confectioners’ sugar or whipped cream if desired

Active time: 30 minutes
Total time: 30 minutes
Makes: About 8 pancakes
