Hope you’re celebrating the holidays with family, friends, and people you love.

This year, I’m grateful to be spending it with my husband (second Christmas as a newlywed!) and in our brand new house (first Christmas as a new homeowner!).

It’s also the first year we have our two adorable bunnies as part of our family, including our brand new “Puppy” bunny… which is, without a doubt, my favorite non-human love of my life right now. I mean, how can you NOT love this thing?

We’ve always had regular straight-eared bunnies (we had 2 Mini Rex rabbits before, and we currently own a Netherland Dwarf rabbit). But in recent months I’ve fallen in love with Holland Lop bunnies. And now that you’ve seen our new Puppy? Surely you can understand why!

So yeah, just wanted to wish everyone a Merry Christmas. Time to celebrate with family before the mass-shopping spree begins on Boxing Day. More on that to come, but for now… cheers!

Attended my second Foxy Originals Friends & Family Holiday Sale at the Bata Shoe Museum!

It's time for the annual Foxy Originals friends & family holiday sale at the Bata Shoe Museum!

Guess what? It’s that time again!

That’s right, December is in full swing, which means only one thing… it’s time for Foxy Originals to host their annual friends and family holiday sale at the Bata Shoe Museum!

Many of you may remember how big a fan I am of handmade, one of a kind Foxy Originals jewelry. Not only did I win one of their Facebook contests (and along with it came an awesome bounty of $200 in free Foxy jewelry!), I also practically cleaned out their clearance jewelry during last year’s friends and family sale.

You would think with a Foxy collection as big as mine, I wouldn’t need to buy any more stuff from them. But that’s where you’re wrong. At prices like $5 for a pair of earrings (regularly priced at around $24 for the dangly filigree ones that I like), $5 for a ring (also regularly priced at $24), and $10 for any of their necklaces (including their famous reversible necklaces, regularly priced at around $30 to $34)… how can you say no?

Now, I know I’ve already proclaimed my undying love for Foxy’s silver earrings before… but it wasn’t until recently that I’ve started getting into their gold jewelry. Maybe it’s ’cause I already own the silver version of pretty much everything listed here in Foxy’s filigree earrings collection. So in my head, buying the same jewelry items in gold that I already owned in silver? Completely justifiable!

While on the topic of gold Foxy jewelry… I’ve been in love with these gorgeous Swirl rings from the new Daydream collection for a while now (drooling from afar, anyway). However, I was never really much of a ring person (in fact, this might come as a surprise but I never really owned any Foxy rings!)… and $24 for a single ring seemed a bit steep to me (considering I could get a pair of earrings for the same price). But when I found it in the clearance bin for only $5? In both silver AND gold? Oh, happy day for Karina!

I must have felt more spontaneous than usual during the sale, because I suddenly felt the urge to splurge on Foxy’s signature reversible necklaces. When it comes to their necklaces, I usually only purchase their monochrome all-silver or all-gold variety. I mean, of course I own a couple of their multicolor flippable necklaces… but during the sale this year I went full-blown, all-out crazy and bought out practically everything they had in their clearance bins. Well, just the cute ones anyway. And only enough to cover all colors of the rainbow, and nothing more, I swear! Check them out below…

And lastly, you know I couldn’t escape the holiday sale without browsing items from the new collections. I fell in love with what I believe is one of Foxy’s best silver filigree earrings to date. Check out these Hazel earrings, also from the Daydream collection. They’re super pretty, AND they were only $20 at the holiday sale… with no tax!

Another thing I swooned over? This chunky silver filigree Jade bracelet. Like their rings, I’ve never really paid much attention to Foxy’s bracelet collection. But I’ve always been a huge fan of their tree-themed jewelry, so there was no I way I could turn down a swoon-worthy bracelet consisting of “four panels of foliage.” It’s like having a bracelet made to order to match my existing Foxy silver filigree leaf earrings!

One more item I couldn’t resist? A necklace that’s completely new to the Foxy shop… something I’ve never seen before. I was intrigued.

What is it you ask? If you go to Foxy Originals website right now, you’ll see it featured in a large banner ad image across their home page:

I guess you can consider it a multicolor reversible necklace like the other items from this signature collection of Foxy’s. But somehow for me, this Serenity necklace is completely different.

For one thing, the colors are jaw-droppingly (Is that a word? It is now!) beautiful. Coral pink on one side and my favorite lime green on the other? So yummy. And something about the shape and the material that it’s made of makes this necklace look classier than the other reversible necklaces.

Anyway, seeing how it was also available for less at the holiday sale, I had to pick it up (despite having already cleaned out of their clearance bins Foxy’s regular type of reversible necklaces!).

My handmade chunky Red #1 Computer Keyboard Key Button Rose Ring was featured in an Etsy treasury list (thanks, Julie!)

Remember a couple posts ago, I had blogged about my long overdue return to Etsy… and I had announced the official launch of my brand new KnittingNPurling Etsy store?

Foolproof Lemon & Garlic Roasted Whole Chicken recipe (my own updated, mishmash version!), plus tips on how to roast the perfect chicken

Ever wanted to cook the perfect rotisserie whole chicken? Well, you're at the right place!

Have you ever tried roasting your own chicken at home, but with less than satisfactory results? Or perhaps you’re still a rotisserie virgin, and have yet to cross over because you just have no idea how to cook a roast chicken to begin with.

Either way, I’m here to tell you it really isn’t that hard (Hey if I can do it, then you can too!).

When it comes to roasting chickens, I understand that it might appear to be intimidating at first (since we ARE talking an entire bird here… y’know, a 3 to 4 lb whole chicken complete with the wings, the drumsticks, the breasts, everything!) I thought so too, at first, until I tried cooking one for the first time. And that’s when I realized it’s actually not that hard. It’s like when I tried baking my own 8 lb ham. I didn’t think I could pull it off at first, but it turned out to be pretty easy then, too!

Anyway, do you want to try your hand at roasting your own whole chicken? Here are some tips & advice on how to pull it off successfully, along with my own foolproof Lemon & Garlic Roasted Whole Chicken recipe (the resulting mishmash of several roast chicken recipes, mixed in with a few replacement ingredients of my own)! Enjoy.

Tips on How to Roast a Chicken:

A chicken's idea of a horror movie? Roasted poultry, rotisserie-style! (Har har, a little food joke there for ya. I know, it was pretty bad...)

1) What is the safe internal temperature for cooked whole chicken to be considered “done?”

  • Although the USDA Food Safety and Inspection Service website recommends whole chickens as safe to eat when cooked to a minimum internal temperature of 165°F, most people (myself included) usually prefer poultry to be cooked to a higher temperature
  • On the flip side, the Canadian Food Inspection Agency recommends whole poultry to be cooked to an internal temperature of 185°F in order to prevent any possibility of foodborne illnesses from occurring
  • Personally, I recommend 180°F as the ideal safe cooking temperature for roasted chicken (in fact, if you do a bit of research you’ll notice most people recommend 180°F as the standard threshold temperature)
  • However, keep in mind most recipes call for the meat to be removed from the heat source and stand for a solid 10 to 15 minutes before carving… during which time the temperature of the chicken will likely rise 5°F to 20°F
  • Remember, when measuring the internal temperature of a roasted whole chicken, always insert the thermometer into the thickest part of the chicken thigh in order to get the most accurate reading. And if you plan on baking more chickens in the future, I highly recommend investing in a digital meat thermometer. They’re not expensive, and it’ll make your life a LOT easier… trust me!)
  • Signs to look for to tell whether your chicken is done? When juices run clear when you prickle it with a fork and when the drumstick moves easily in its socket.
2) How long does it take to cook a whole chicken, and at what oven temperature?

Roasting a whole chicken is one thing... but I think I'll draw the line at "making a turducken!" (That's just not natural and completely disturbing, don't you think?)

  • Both the time it takes to roast an entire chicken and the oven temperature needed to cook it are dependent on each other, as well as the size of the bird
  • Some roasted whole chicken recipes call for oven temperatures in the low range (such as 350°F), while others request temperatures upward of 475°F (like in Jamie Oliver’s Perfect Roast Chicken recipe) to even 500°F!
  • However, if you look carefully you’ll notice high oven temperatures in roasted chicken recipes are referring mostly to pre-heating only… and temperatures are usually turned down halfway through the cooking process
  • My advice? When determining cooking times and oven temperatures for roasting a chicken, always ask yourself these 3 essential questions:

    1. How much does the bird weigh?
    2. Do you intend on continually adjusting oven temperatures while roasting?
    3. How “juicy” vs. “well done” do you prefer your chicken?

    How will these questions help you? Well, let’s say you’re planning on roasting on a consistently low oven temperature (e.g. 375°F throughout and without temperature adjustments). Then the general rule of thumb is to calculate a cooking time of 20 minutes per pound of meat, plus an additional 10 to 20 minutes. In comparison, if you’re OK with tending to the oven continuously throughout the cooking process, then you can choose to preheat the oven to 450°F and bake the bird on high for the first 10 to 15 minutes as well as the last 10 to 15 minutes. During the middle, the oven temperature should be turned down to a low 375°F. Yes, this requires extra effort… but if you have the time and patience, it could pay off as you’ll end up with a cooked chicken that’s got crispier skin and juicier & more succulent meat.
3) What’s the ultimate secret to a perfectly moist & tender roast chicken?

  • 3 words: Baste, baste, baste!
  • I know, basting sounds like a lot of work. But all that’s really required is taking the bird out of the oven at regularly timed intervals, and brushing some of the juice from the bottom of the pan all over surface of the chicken. The few extra minutes required from you in order to baste the chicken? Let’s just say it’ll pay off handsomely when you realize just how much juicier the chicken gets… not to mention it prevents over-cooking and over-burning/blackening the skin!

Karina’s Mishmashed “Lemon & Garlic Roasted Whole Chicken” Recipe

Ingredients:

  • 1 (3 to 4 lb) whole chicken
  • 1 whole lemon
  • 6 cloves garlic
  • 1 tsp salt
  • Generous sprinkling of some kind of chicken spice rub
  • 2 onions
  • 2 cups low-sodium chicken broth

Directions:

  • Preheat oven to 400°F (205°C)
  • Slice onions into thick rings
  • Line onion layers along bottom of oven-safe shallow roasting pan
  • Remove giblets & any fat from chicken cavity
  • Roll lemon on counter with your hand to soften it, then prick thoroughly with a fork (going all the way through the rind to the flesh)
  • In a small bowl, mash garlic with salt until paste forms
  • Pour generous sprinkling of some kind of chicken spice rub in another small bowl (for use on outside of bird to give that extra boost of flavor to the skin)
  • Rub half of garlic & salt paste inside chicken
  • Stuff prepared lemon in cavity
  • Slowly use your fingers to lift chicken skin away from meat (both on top & on bottom of chicken), then rub remaining half of garlic & salt paste in between
  • Sprinkle spice rub all over outside of chicken (i.e. on top of skin), particularly focusing on top half where it will be exposed to air when baking
  • Place chicken in pan on top of sliced onions
  • Pour broth around chicken
  • Roast for 60 to 65 min (if you prefer your chicken to be just well-done enough to be safe to eat), or leave in oven upwards of an extra 30 min (if you prefer your chicken to be truly well done)
  • While chicken is baking, check back every 15 to 20 min to baste it (by brushing broth from bottom of pan all over surface area of chicken)
  • Remove chicken from oven; cover & let rest for 10 min before carving
  • Throw out lemon (don’t eat!); serve chicken with onion slices & pan juices

Serves: 4

As mentioned in my last blog post, I’ve decided to start up a brand new Etsy store. So without further ado, let me officially welcome you to my new KnittingNPurling Etsy store!

Yes, it’s true. This isn’t my first Etsy shop. Some of you may recall I had started the ConigliVerdi Etsy store back in January 2010 to help pay for my wedding in Florence, Italy.

That store was semi-successful. I may not have gotten the chance to sell much online, but it did lead to having my jewelry temporarily sold in-store at a Toronto consignment store… one that was located in the trendy Beaches area of Queen Street East, home to the Beaches International Jazz Festival (voted Toronto’s #1 outdoor summer music event!).

You may have already guessed this (hello, blog hiatus #3?), but I’m horrible at keeping projects going. So unfortunately, maintaining that store sorta fell by the wayside. Although that shouldn’t come as that much of a surprise. I mean not only is there so much to do when it comes to prepping for a wedding… it didn’t help matters when that wedding was located in a foreign land!

Anyway, that’s neither here nor there. Back to my new KnittingNPurling Etsy shop!

I’ve decided to start fresh this time on Etsy because I wanted the shop to be officially tied to this Knitting & Purling blog website that you’re currently on (which, yes, I did indeed recently reboot from my 7-month long hiatus because I wanted to start selling on Etsy again).

This time, I’ve decided to focus specifically on one theme and one theme only: handmade geeky gifts, jewelry & fashion accessories for computer nerds.

If this piques your interest, then please come back regularly to check out my blog! I’ll be showcasing more items from my KnittingNPurling Etsy store in the future as I continue to make new items and add them to the shop. I’ve already got a never ending list of ideas planned in my head of things I want to make, more than I’ll ever have time to accomplish! But don’t worry, I’ll find a way to make the time… (Sleep?
